After years in the industry, including a stint with Kimbal Musk’s restaurant group in Boulder, Nick recognized something that was missing in nearby Fort Collins: an Italian-American spot that was both elevated and approachable, where locals could enjoy a meal that felt like home—but better.

In February 2015, that vision came to life with the opening of Nick’s Restaurant and Bar, a lively, eclectic eatery that quickly became a cornerstone of the community. Located just south of Old Town and directly across from campus, Nick’s blends the soul of a traditional Italian kitchen with the vibe of a contemporary American tavern. The result? A menu that’s just as comfortable dishing out a rich, house-made bucatini carbonara as it is serving what many call the best burger and wings in town.
