Waterfront Bar And Grill, 13 S Main St Marysville, Complaint, July 1. Fail. The Person in Charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection. Observed the following: – Two ashtrays with cigarette butts in the dish area and food prep area by the rear exit door – Employee cellphone on the food prep table in the food prep area – Employee keys and apron stored on the deli slicer in the food prep area. –Observed the following: – Piece of raw beef dried and discolored stored uncovered directly on the shelf of the bain-marie unit in the food prep area – Package of moldy cheese on a rolling rack in the walk-in cooler. Observed the following foods stored uncovered: – Pan of cooked baked potatoes in the cold hold unit in the main food prep area – Pan of raw scallops in the cold hold unit in the main food prep area – Container of raw shrimp in the cold hold unit in the main food prep area – Pan of raw beef stored directly above RTE lettuce in the cold hold unit in the main food prep area – Pan of casserole in the walk-in cooler – Container of whole cooked crabs in the walk-in cooler – Pan of baked potatoes in the walk-in cooler – Loose RTE produce stored on top of other boxes or directly on the shelf of the walk-in cooler – Pan of raw pork stored directly above a tray of cooked, RTE pork in the walk-in cooler. Food stored in a wet and/or unclean area of the facility. Observed the following: – Containers of RTE food stored open with no covering in bain-marie unit in the main food prep area; bain-marie unit observed to have standing water on the bottom shelf approximately 3/4″ deep leaving food products at risk of splash back as well as a mold-like substance on the interior of the cooling units – Containers of food stored uncovered in the walk-in cooler adjacent to a black, mold-like substance on the walls of the unit leaving food products at risk of contamination – Drinks stored in the drink chests behind the bar; drink chests contained approximately 2-3″ of standing water, drinks are at risk of becoming submerged. Observed numerous food products throughout the entire food facility without proper datemarking. Observed carboard being used as a shelf-liner throughout the facility; cardboard is not a smooth, easily cleanable surface. Loose and deteriorating rubber door gaskets observed on the bain-marie and cold hold units in the main food prep area. The following food contact surfaces were observed to have food residue and were otherwise not clean to sight and touch: – Deli slicer in the rear food prep area – Dish racks in the dish area containing clean dishes – Service ice chests behind the indoor and outdoor bars observed with a black, mold-like substance on the interior. Observed the following non-food contact surfaces not cleaned at a frequency to preclude accumulation of dirt and soil: – Gaskets of the bain-marie and cold hold units in the main food prep area observed with a heavy food debris, black-mold like substance and slime buildup – Black, mold-like substance observed on the interior walls and ceilings of the bain-marie and cold hold units in the main food prep area – Heavy dirt, grease and food debris build-up on the doors, sides, handles, hinges and interiors of the bain-marie and cold hold units in the main food prep area. Paper towel dispenser observed empty at the handwash sink in the food prep area. Corrected on-site. Food prep and storage areas of the food facility is extremely dirty, dusty, and in need of cleaning. Observed the following: – Black, mold-like substance on the walls, ceilings and beer tap lines in the walk-in cooler – Heavy grease build-up on the grill line in the food prep area – Heavy food debris build-up under the ware washing machine and three-bay sink in the dish area – Food debris, dirt and/or grease throughout the main food prep area in general.
