Not even a year after bringing a “Shark Tank”-approved lobster food truck to Lubbock, the business is rolling out a second truck to meet demand.
Cousins Maine Lobster, a food truck franchise that appeared on “Shark Tank” in 2012, first entered Lubbock in October 2024, according to a news release. After 10 months of serving Maine classics, including lobster rolls and whoopie pies, to the Hub City area, the franchise announced it will open a second food truck.
“After a strong debut with our first truck in Lubbock, we are looking forward to serving more communities who can’t get enough of Cousins Maine Lobster,” said Chris Wilson, local franchisee. “It’s been an honor to build the brand’s expansion throughout West Texas and bring a taste of Maine to new areas. I am excited for our second truck to serve more people in the region and can enjoy our premium lobster offering and hospitality.”…
