Texas barbecue is known for a lot of things, like complimentary white bread, serving sauce on the side and an emphasis on slow-cooked, high-quality meats with the perfect amount of smokiness. Potbelli BBQ aims to keep those regional traditions alive, resulting in droves of curious customers lining up to try the barbecue concept.
Pitmaster Terrence Russell leads the ship at Potbelli BBQ & Catering LLC, which now acts simultaneously as a drop-off catering service and a full-service restaurant as of July 22, the day of its brick-and-mortar’s grand opening. As many folks have already, you can find Potbelli BBQ at its commercial space inside East Commerce Live-Work Lofts. That’s where the line starts promptly at 11 a.m. on Mondays and Tuesdays, Potbelli’s primary business days.
“It is extremely difficult to run a restaurant more than two days a week because my brisket making process involves three days of work from trim to slice,” Russell told MySA. “I was able to work out a deal with the landlord to let us open up on Fridays from 4 to 9 for dinner.”
Potbelli BBQ gets its name from Russell’s uncle Darryl Russell, who founded an Austin record label with the name Potbelli Media Group in the late 1980s. The label focused on promoting hip-hop and rap music, and it exists in some form today…
