An inspector found some high-priority food temperature violations during a recent visit to Cody’s Original Roadhouse in The Villages.
During an inspection on Aug. 7 at the restaurant at Brownwood, the inspector found meat and chicken that were far below the required temperature, according to a report on file with the Florida Department of Business and Professional Regulation. The inspector found that chicken in a steam table on the cookline was at 114 degrees, rather than the required 135 degrees. The restaurant staff agreed to discard the chicken. The inspector also found cooked steak at 94 degrees. The steak was reheated.
At the other end of the spectrum, the inspector found foods that were warmer than the required 41 degrees, including butter at 46 degrees, sour cream at 45 degrees, cinnamon butter at 46 degrees shredded lettuce at 46 degrees and a bacon and cheese mixture at 45 degrees…
