Cava is adding another stop on its South Florida tour. The fast-casual chain, known for Mediterranean-inspired bowls, salads, and pitas, is set to open at Town Center Aventura 18801 Biscayne Blvd., Ste. 275, in the space previously home to Bolay.
The Aventura opening will mark the brand’s fourth South Florida location. The first arrived in Hialeah Gardens earlier this year at 3645 West 84th St., Unit 5, followed by Plantation at 1714 N. University Dr., Suite A. A Brickell shop at 801 Brickell Ave. is expected to debut in fall 2025. That rollout is part of Cava’s larger national expansion. The company opened 58 restaurants across the U.S. in 2024 alone and has said it plans to operate 1,000 locations by 2032.
What Cava is Famous For
For those unfamiliar with the popular chain, Cava’s big draw is its build-your-own model. Diners start with a base of greens, grains, or pita, then add proteins like grilled chicken, falafel, or lamb meatballs. From there, toppings and sauces stack up fast – roasted vegetables, hummus, tzatziki, harissa, the popular “Crazy Feta,” and dressings like lemon herb tahini or Greek vinaigrette. For anyone who doesn’t feel like mixing and matching, or gets overwhelmed with that many options, the chain offers a handful of set combinations that highlight its greatest hits, from lamb with avocado and hummus to falafel with pita crisps and roasted vegetables.
Pitas follow the same approach in hand-held form, with fillings ranging from chicken and garlic dressing to falafel with roasted eggplant. Sides such as the popular hot harissa pita chips and spreads like red pepper hummus or the “Crazy Feta” round out the menu, while drinks are lean house-made and seasonal, including juices flavored with strawberry citrus or blueberry lavender alongside teas, lemonades, and sparkling waters.
