When Dustin Lowry decided to open The Mill Steakhouse + Spirits in June 2017, the name wasn’t just clever branding — it was a nod to that heritage, a way of tying his restaurant to the story of the city itself.
Dustin had spent years in the movie industry before moving back to the Pacific Northwest from Arizona, looking for a new path outside of entertainment. Together with his silent partner — his brother — he set his sights on creating something rooted in craft and community.
