Door gaskets of reach-in coolers in the kitchen area are damaged non existing and in need of replacing. Manager has informed me they have been ordered and should be replaced next week. Walk-in freezer condenser fan area with accumulation of hanging ice falling on to food products. Raw ground beef in the walk-in cooler is stored on top of a box of RTE vegetable soup. The Person in Charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection. Salmon in ROP packaging is not being removed prior to thawing. Old food residue observed in handwashing sink in the kitchen/dishwashing area. Refrigerated ready to eat, time/temperature control for safety food (Meatloaf, coleslaw) prepared in the food facility and held for more than 24 hours, located in the 3 door reach-in and 1 door stand-up reach-in is not being date marked. Commercially processed refrigerated, ready to eat, time/temperature control for safety Roast Beef, Meatballs, Cheese located in the walk-in cooler, and held more than 24 hours, is not being marked with the date it was opened. Mops being stored directly on the floor and not hung to dry in the dishwashing area. Crap Dip 08/28, Chili 08/25 and cut tomato 08/29, a refrigerated, ready to eat time temperature control for safety food in the walk-in cooler area, was date-marked by the facility, but was beyond the 7 day use or sell by date and requires discarding. A working container of cleaner/sanitizer was stored above food slicer and hanging on shelf with clean dishes with food, equipment, and/or single service articles in the kitchen and dishwashing area. Interior of oven with excessive char and in need of cleaning. Condenser/fan in the walk-in cooler with green and black matter. Floor under and around three-compartment sink area is dirty, accumulation of build-up and needs cleaned. accumulation and in need of cleaning. Floor fan in the kitchen area facing meat slicing area is dust dirty and in need of cleaning. Deflector shield on the interior of the ice machine, a food contact surface, was observed to have pink matter and was not clean to sight and touch. Food Facility has one handwashing sink in the kitchen area. The sink has chemicals hanging above with chemical nozzles directly above. Working containers in dishwashing area, server station, outdoor bar and above food slicer area, used for storing chemicals, cleaners taken from bulk supplies, were not marked with the common name of the chemical. Cell phone and pack of cigarettes stored on shelf above meat-slicing area. Personal belongings need to be stored in a designated area away from food and food equipment.
