This Beloved 80s Restaurant Is Making a Wild Minnesota Comeback

Closed for more than 20 years, this once-popular Mexican restaurant founded right here in Minnesota is ready to make an historic comeback with a menu full of fan favorites.

The revival of this beloved brand is fueled by deep nostalgia and a successful crowdfunding campaign, proving that for many, the craving for classic Tex-Mex never truly faded.

Opening its first restaurant in 1975, and rapidly expanding to over 200 locations by the early 1980s, the Chi-Chi’s Mexican chain was exploding in popularity across the Midwest and beyond. However, by the mid-1980s, their widespread popularity began to decline and ownership changed hands several times, ultimately leading the company to file for bankruptcy by 2003. The last remaining U.S. location closed in 2004.

The New Era of Tex-Mex in Minnesota

Fast-forward to 2025, and fans will once again be able to enjoy the iconic Tex-Mex menu that made Chi-Chi’s restaurant famous. The rebirth of Chi-Chi’s will start on October 6th, when the highly anticipated first location will open its doors in St. Louis Park. This flagship location is being spearheaded by Michael McDermott, the son of Chi-Chi’s co-founder Marno McDermott, who is a seasoned veteran in the restaurant industry.

Honoring the Classics, Adding a Fresh Twist in MN

Michael McDermott is behind the restaurant reopening, which will feature “enhanced menu items, original favorites, and an upgraded bar experience.” Giving us a sneak peek of the menu, fans can celebrate knowing the iconic Chi-Chi’s Original Chimichanga is back, along with other dishes like Quesabirria Tacos, Seafood Enchiladas, Original Nachos Grande, and El Burro Con Queso…
