People’s Waffle brings gluten-free breakfast to Spokane community

From the Belgian or Liege waffles, People’s Waffle in Spokane are made from a traditional American batter that happens to be gluten-free, although co-founder Alyssa Agee said you wouldn’t know it by the taste.

“Yes, our menu is gluten-free, but I like to mention that after you’ve had your meal,” Agee said. “People are just like ‘Oh my gosh, that gravy was so good.’ When we were getting off the ground, I was trying to decide if I wanted to add flour to our recipes, and I said ‘No, it’s amazing as is — and I want to keep it that way.’”

After moving back to Spokane from Portland, Oregon, Agee said she and her family missed the diverse offerings of waffles and toppings that accompanied life there. In April 2021, with a recipe passed down from Agee’s great-grandmother, “GeGe,” Agee said she was ready to bring her waffles into Spokane proper…
