Inside Chef Charbel Hayek’s New Coastal Mediterranean Hotspot in San Clemente

The culinary talent behind L.A.’s uber-popular Laya and Ladyhawk—who went up against beloved O.C.-based Amar Santana in “Top Chef: World All-Stars” in 2023—is set to open his newest concept, ILYA, this month in San Clemente. “We have many diners who come to us from Orange County, and they have always asked when I plan to open a restaurant closer to them. As I began getting to know Orange County, I fell in love with the area, especially the beautiful city of San Clemente, which seems like the perfect fit for my coastal Mediterranean menu at ILYA.”

In Greek, the word elia means olive tree, which is symbolic of peace, wisdom, strength, and abundance throughout the Mediterranean. In changing the spelling of the word a bit, we aimed to make it our own. It brings with it elegance and calm. When spoken, it feels graceful and airy, which complements the overall coastal Mediterranean vibe of the restaurant.
