Steak Crostini with Horseradish Cream & Arugula

  • 1 lb sirloin, tenderloin, or flank steak
  • 1 French baguette, sliced ½ inch thick
  • 2 tbsp olive oil
  • ½ cup sour cream or crème fraîche
  • 1–2 tbsp prepared horseradish (to taste)
  • 1 tsp lemon juice
  • Kosher salt & cracked black pepper, to taste
  • 1 cup baby arugula
  • Optional garnish: shaved parmesan or balsamic glaze
