ALBUQUERQUE — Seble Yemenu, owner of the popular Clay Pot Cuisine, hosted a traditional Ethiopian coffee ceremony at her restaurant on Wednesday, celebrating the next chapter for her growing business.
Yemenu, who initially launched Clay Pot Cuisine as a pop-up dining experience in September, has gained a loyal following for her authentic Ethiopian dishes, including injera, doro wat, and a variety of stews and vegetarian specialties. The restaurant’s early success has prompted Yemenu to expand operations beyond the limited pop-up schedule.
Starting Monday, Clay Pot Cuisine will extend its hours, transitioning toward a full-service restaurant format. “We started with pop-ups to introduce Albuquerque to Ethiopian flavors in a manageable way,” Yemenu said. “The response has been amazing, and now we’re ready to provide a consistent dining experience for our guests.”…
