A recent transplant from Texas to Fresno has stirred up a lively discussion on social media about the local taco truck culture. The newcomer, who is a self-proclaimed home cook and taco truck enthusiast, has been puzzled by the lack of standard salsa with every taco order and the inconsistent use of lemons and limes. Out of the four trucks visited, only one provided salsa with the order, while the others offered no salsa, hot sauce, or pico de gallo. The newcomer also noticed that two trucks gave lemon wedges, one gave lime wedges, and one gave nothing at all. This deviation from what the newcomer considers to be the unwritten law of taco serving – limes and salsa/hot sauce as standard, non-negotiable, and mandatory – has led to a call for explanations from the Fresno community.
