CEDAR RAPIDS, Iowa (KCRG) – I’ve got another great weeknight meal for you that is going to transform an affordable chuck roast into comfort food at its finest. This hearty Beef Roast Patty Melt combines slow-cooked shredded beef, onions and melty Swiss cheese in a toasted sandwich. The star of the show? Now, we’re using a chuck roast, which is a rather inexpensive cut but don’t let that fool you, you’re going to get all those great nutrients and a delicious tender bite. Beef roast gives you protein, iron, zinc, and B vitamins. The key is how you prep it- we’re going low and slow to make it nice and tender.

We’re going to add this into our slow cooker with onions, an onion soup mix and broth. Six-eight hours and you’re ready to shred.
