When Jenny Slagle founded Indigenous Eats in 2022 with her husband, Andrew, she didn’t just envision a fast-casual spot serving Native American comfort foods, but also a place where community could gather and Indigenous cultures could be celebrated.
At their first location near Gonzaga University, the couple’s concept of frybread tacos and other handhelds quickly gained traction, and they expanded to River Park Square’s food court in 2023. In summer of this year, Indigenous Eats also added a food truck to its repertoire, catering outdoor events including regional powwows.
