Noe Valley Bakery, on 24th Street in San Francisco, underwent a routine inspection. Inspectors from the San Francisco Health Department noted multiple violations at the facility.
The report lists the following violations at the bakery:
- There was a lack of sanitizer concentration used at the two-compartment sink. The sink was used as a warewashing sink. The inspectors did not detect quaternary ammonia solution in the sanitizer, which the manager indicated was used.
- Inspectors found mouse droppings scattered in several areas of the facility. Mouse droppings were found inside a wooden cabinet by the office desk, leading to the main prep kitchen.
- Mouse droppings were found by the 3-door freezer box, behind the mixers, and under the 2-compartment sink. It was also under the flour bags and bulk food shelves inside the dry storage areas. Mouse droppings were also behind the racks holding pastry goods under the shelves at the front service counters.
- The bulk food items in the back dry storage areas were not stored in food-grade containers with tight-fitting lids.
- The report noted a repeated violation during this inspection. A large amount of plastic containers, food trays, and food storage racks were stored next to the garbage bins. These were in the back and exposed to the common areas.
- Food debris and flour were found on the floors, especially in the prep areas. It was behind the equipment, refrigerators, and freezers, and was nesting behind the freezer units.
