Panera Bread #833, 1178 Mae St. Hummelstown, Follow-up, November 14. Fail. The Person in charge did not demonstrate adequate knowledge of food safety in this food facility, as evidenced by this non-compliant inspection. Observed three large plastic storage ingredient containers (oats, sesame, grains), in the bakery area, is not labeled with the common name of the food. Label on the containers is not legible. Food employees observed in area, not wearing proper hair restraints, such as beard covers. Discussed with employee and corrected on site. Observed a large rolling tan cart, which was broken and in need of replacement. Broken equipment is not easily cleanable. A broken small souffle cup lid holder on the main line observed broken/cracked and in need of replacement. Observed four cases of single-service, single-use articles stored in bakery area and dry storage area directly on the floor, and not 6 inches above the floor. Some, not all corrected on site. Non-food contact surfaces not cleaned at a frequency to preclude accumulation of dirt and soil: Handles on all of the bain marie cooling units in the front and back of the facility in need of cleaning. The top of the dish machine with dried food debris with the possibility to contaminate clean dishes below. Corrected on site. The stainless legs of the two Turbo Chef countertop ovens with accumulation of dried black food debris on the legs and stainless bars and in need of cleaning. Exterior of black rolling ice Cambro with build-up of food debris with the possibility to contaminate gloved hands touching the lid/top of the equipment. Also observed a sesame seed (known allergen) on top of this ice Cambro at this visit. Venting on equipment on the mainline with a build-up of static dust and in need of cleaning. Observed the following on food contact surfaces: Total Bakery area with too-numerous-to-count utensils (scoops, spoons, knives) stored dirty and clean utensils/equipment stored on dirty green hanging racks coming in contact with equipment. Green shelving above the three-bay sink area with dried food debris coming in contact with containers stored on this shelving. Numerous stainless containers stored on the green shelving over the three-bay sink area stored dirty with clean equipment stacked on top of dirty equipment. Ice bucket stored directly on the ledge of the ice machine coming in contact with the ice bucket opening. Corrected on site. Ice bucket with red food splatter on the bucket and not clean to sight or touch. Corrected on site. Numerous ladles stored dirty hanging to the left of the dish machine stored with heavy staining in not clean to sight or touch. Corrected on site. Plastic bins (12) on the assembly/cook line with utensils stored dirty and coming in contact with accumulation of food debris on the interiors of the containers. Corrected on site. A hand-held manual can opener stored in a container with pliers and pens, adding contamination to the equipment. Corrected on site. Food containers inside of the bain marie cooling units are not being changed out daily, including racking being cleaned daily. Eight (8) stainless bowls stored for salad mixing on shelving above the salad refrigerated unit, accumulation of food debris on the shelving and not cleaned the night before. Pulling bowls out dragging food debris and spilling on to bowls below. The trough and underside of the self-serve soda dispenser, including ice chute, with a pink slime mold-like substance in the trough and heavy accumulation of mold-like substance on underside dispensers and surrounding area, including interior and behind ice chute. Bottom interior of salad (cold-hold) bin on the main line with dried lettuce from the night before and not removed for cleaning. Observed clean food equipment and utensils at the three-bay sink area, stored wet in a manner that does not allow for draining and/or air drying (wet nesting)…
