Texas-born Raising Cane’s rival fires up $300K West Texas expansion

A Texas-born rival to Raising Cane’s is expanding across the Lone Star State, and now appears to be setting its sights on a college town out west. Layne’s Chicken Fingers has set plans for a new restaurant in the shadow of Texas Tech University, according to a Texas Department of Licensing and Regulation filing.

The College Station-founded chain is hoping to build a $300,000 restaurant at 7902 University Avenue in Lubbock, per the filing. This new Layne’s comes as the Aggie-loving brand has been ramping up expansion efforts throughout Texas.

The scope of work for its latest Lubbock outpost includes the exterior and interior renovation of an existing 3,175 square foot restaurant into a Layne’s. Its listed address is only 4.2 miles from Texas Tech University, which means Layne’s will also serve as an ideal fast-food spot for Red Raider students…
