Chunky Chicken Walnut Salad
Ingredients
- 1 pound chicken breast, grilled, cooled, and chopped
- 2/3 c. mayonnaise
- 1 – 2 T whole grain mustard
- ½ c. walnuts, chopped
- 1 T honey
- Moon Spice to taste
Directions
Combine all and chill.
Note: This recipe may be served in multiple ways:
- On a bed of greens, garnished with romas.
- In a canapé shell, topped with dried cranberries
- On a toasted bread round, garnished with dried cranberries
Pepper Moon Chilled Crab Dip
Scaled down for home use
Ingredients
- 8 oz cream cheese, softened
- 6 Tbsp heavy cream
- 5–6 oz lump crab meat, picked over
- 1 Tbsp seafood consommé Sub: clam juice, shrimp stock, seafood stock, or chicken stock
- ⅛ tsp cayenne
- ¾ tsp kosher salt
- ¾ tsp black pepper
- ⅛ tsp garlic powder
- ½ cup green onions, finely chopped
Directions
- Mix cream cheese and cream until smooth.
- Stir in consommé (or substitute) and seasonings.
- Fold in crab and green onions gently.
- Chill.
