It has been another delicious year in Colorado Springs with new restaurants continuing to open on the regular. 2025 brought some big landmark openings that had been in the works for years and some unexpected surprises.
On the other end of the spectrum, let’s all pause for a moment to remember long-time favorites Trinity Brewing Company and Señor Manuel’s which closed their doors permanently this year. (The 55-year-old Señor Manuel’s made the announcement official this year after a 2024 fire severely damaged the property.) Both of those are big local losses, but fortunately, this year’s restaurant closure toll wasn’t as heavy as in 2024…
