Classic Southern Biscuits

Ingredients:

  • 2 cups self-rising flour
  • 1/4 cup lard, butter, or beef tallow
  • 3/4 to 1 cup buttermilk
  • 1/4 teaspoon salt

Instructions:

  1. Preheat your oven to 475°F.
  2. Add salt to the flour and mix well.
  3. Cut in your chosen fat (lard, butter, or beef tallow) using your hands, a flour cutting tool, or a fork until the flour becomes slightly crumbly and the fat is evenly distributed throughout.
  4. Add buttermilk and mix into a dough. Adjust consistency as needed—add more milk if the dough is too dry, or more flour if too wet. The exact amount depends on your flour’s density.
  5. Turn the dough out onto a floured surface and roll with a floured rolling pin to about 1/2 inch thick.
  6. Cut with a biscuit cutter or glass and place touching on a baking pan.
  7. Brush melted butter on top and bake for 15 minutes. If you need more browning, add another minute or two, checking after each additional minute.

Alternative Methods:

  • Hand-shaped: Roll a hunk of dough in your floured hands and pat it down into the pan
  • Drop biscuits: Make the dough wetter and spoon thick dollops onto the pan

Miso Maple Brown Butter

Elevate your biscuits with this sophisticated compound butter that balances umami richness with sweet maple notes.

Ingredients:

  • 1 pound unsalted butter
  • 1/2 cup yellow miso
  • 1/4 cup real maple syrup

Instructions:

  1. Brown the butter by gently simmering on medium heat until foaming, whisking regularly until the butter turns light brown and develops a nutty aroma.
  2. Cool slightly and add miso a little at a time, whisking until fully incorporated.
  3. Whisk in maple syrup and continue stirring while cooling to prevent ingredients from separating.
  4. Serve at room temperature as a spread, or baste biscuits immediately as they come out of the oven for an elevated experience.
