GM Banh Mi, a new quick-service restaurant on West Johnson Street that specializes in banh mi, became the only dedicated Vietnamese eatery in downtown Madison in November.
It’s also the first business to open in the West Johnson Street retail space beneath the oLiv Madison apartment complex and a first culinary venture for the restaurant’s owner, Zoe Nguyen, whose family comes from Vietnam.
Nguyen’s love of food runs in the family: Her brother Gia Minh was a chef and culinary student in Toronto when he passed away in 2022. Minh’s passion for cooking inspired his sister to become a chef herself and open GM Banh Mi, which pays tribute to Gia Minh with its name…
