ALBANY — “The blame’s on me. I put everything else ahead of opening the restaurant,” said property developer Ryan Jankow, explaining the 20-month lag between the first online promise of “Coming soon!” for the new Bloom Boutique Bar & Eatery and when it will finally open, now scheduled for Jan. 13.
The first food photo appeared in August, by which time the chef and future Bloom partner Ryan O’Shea had been aboard the project for eight months. He designed the menu and state-of-the-art kitchen while also serving as head chef of City Line Bar & Grill, which Jankow and business partner Rob Malkus opened in 2011 on Western Avenue near the Albany-Guilderland border.
Malkus is now sole proprietor of City Line, but he and Jankow co-own Bloom, which is being finished on the corner of New Scotland Avenue and South Allen Street.
