LAFAYETTE, La. (KMDL-FM) – The wait is nearly over for the opening of the new Bistrology Restaurant on Ambassador Caffery in Lafayette. The owners have announced via social media that the Latin-infused brunch concept taking over the former Chili’s will be opening this Monday, January 12, 2026.
How Many Other Bistrology Restaurants Are There?
This will mark the franchise’s third location, as it currently operates in Miramar Beach and Pensacola, both in Florida. Another Louisiana location will be coming soon to 2810 Chemin Metairie Parkway in Youngsville.
The new Bistrology location in Lafayette is owned and operated by franchisee Ruben Chavez. The concept is centered around Latin-inspired brunch plates, specialty coffees, and an array of cocktails, all delivered via colorful, elevated presentations.
What’s on the Bistrology Menu
The breakfast and brunch menu features scrambles, omelets, pancakes, waffles, French toast, stuffed croissants, stuffed avocados, Benedict eggs, burgers, and ciabatta sandwiches. There’s even a menu of hand-crafted fruit popsicles.

The coffee menu features espresso-based drinks, cold brews, and specialty lattes. The exclusive signature cocktail menu showcases an array of hand-crafted drinks by Mario Celle, Bistrology’s renowned Italian bartender.
