This Fort Collins fusion spot you’ve been waiting for is open

After two years of much anticipation, the wait is finally over.

Gaia Masala & Burger at 649 S. College Ave. switched on its blinking “open” sign on Jan. 20, welcoming Fort Collins diners to a brand-new dining space and full menu that fuses Indian, Mediterranean and American flavors.

The restaurant was first announced in April 2024, when it was preparing to take over the former Half Fast Subs space, but a couple of behind-the-scenes hurdles slowed the opening, including the need to replace an undersized kitchen hood, owner Hira Kunwar told the Coloradoan in December 2025.
