New Rochester pizza place blends New Haven style with NYC flavor

The world of pizza has become nerdy in the same way that things like wine, craft beer and barbecue have become. But there’s no need to study things like hydration, oven temperatures and crumb structures to simply enjoy a good pizza.

For those who aren’t into such details, here’s what you need to know. Pizza NOTA has opened at 192 Anderson Ave. in Rochester’s Neighborhood of the Arts, set behind Three Heads Brewing. It makes pizzas with very thin crusts – arguably the thinnest in Rochester – and baked with a pronounced char. The toppings are applied more sparingly than on its thicker counterparts.

Pizza NOTA also serves classic and creative appetizers, salads, sandwiches and chicken cutlets. The drunken cutlet, as an example, tops a cutlet with homemade vodka sauce, homemade stracciatella cheese, olive oil and basil, and serves it up in a pizza box.
