Here’s what’s new on Northern Colorado’s foodie bucket list for 2026

February is here, and Northern Colorado’s food scene is already showing signs of life with new openings, soft launches and updates locals have been eagerly awaiting.

This year, there’s plenty to put on your foodie bucket list: a new Mexican eatery, Chelo’s, is quietly soft-opening just west of Mein House in Timnath; two boba spots are making their way to Fort Collins and a Mediterranean concept is set to open inside FoCo Cafe.

Not every plan is moving forward, though — Zen Haven, which was originally going to open as Spuds Lounge and Cafe, will no longer be opening…
