Bricks Corner, the Salt Lake gastropub that turned Detroit-style pan pizza into a local obsession, is gearing up to open a much larger second spot in West Valley City this spring. The new location, set for the 2500 block of South 5600 West and expected to debut in May, will come with a private dining room, a roomy patio, and an arcade that the company says will keep things firmly in family-friendly territory. Just like at the original, Bricks Corner’s thick, roughly three-inch-high crust and pan-baked style will be the backbone of the menu.
According to ABC4 Utah, the West Valley restaurant will fill about 5,000 square feet at 2508 S. 5600 W and will include a gelato bar available only at that location. The outlet also reports that the expansion is expected to generate numerous local jobs and that the project is tracking toward a May opening.
Where it’s going and approvals
The West Valley build is already showing up in the bureaucratic paper trail. A June 12, 2025, Magna Water District board packet lists “Bricks Corner” at 2508 S 5600 W, confirming the address and noting that the project required a review of water and sewer availability. Those documents are posted on Utah.gov in its public notices system.
What the pies will be like
Bricks Corner leans hard into its Detroit-style approach, with pan pies that rise to about three inches and a dough the company says is double-proofed over 24 hours, made with organic flour and reverse-osmosis water. “Opening a second location has been a long-held dream, and we are excited to expand,” Chef Josh said in a press release, as reported by ABC4 Utah. The new restaurant is expected to follow the original’s seasonal-driven menu while layering in a few one-off perks such as the exclusive gelato bar.
