Peruvian Dining Concept Expanding to Sunrise

SUNRISE, FL — CVI.CHE 105 is opening its seventh South Florida location at 105 Sawgrass Mills Mall, 12801 W Sunrise Blvd, Sunrise, FL 33323, bringing its Peruvian dining concept to one of the most visited shopping destinations in the world, founder Juan Chipoco told Business Debut. The restaurant will host a friends-and-family opening on February 12, followed by a public opening on February 13.

The Sawgrass Mills location will mark the brand’s latest expansion nearly 18 years after Chipoco opened the original CVI.CHE 105 in Downtown Miami. The new restaurant will be located near the Cheesecake Factory, a high-traffic area within the mall.

What to Expect

CVI.CHE 105 is a full-service restaurant with table service and waitstaff. The Sawgrass Mills location will feature approximately 270 seats, consistent with the brand’s large-format, high-volume approach.

Chipoco described the restaurant as more than a place to eat. “We’re not just serving food,” he told Business Debut. “CVI.CHE 105 is sharing Peruvian culture, hospitality, and energy.”

Menu and Vision

The menu will highlight fresh ceviche, classic Peruvian dishes, and Nikkei cuisine, a fusion of Japanese and Peruvian flavors. Guests can also expect handcrafted cocktails, including pisco-based offerings.

“Our menu is rooted in authenticity,” Chipoco told Business Debut, adding that each restaurant is designed to be approachable and centered on celebration. He said significant attention is placed on interior design to reflect Peru’s cultural roots and create a welcoming atmosphere.

Ownership and Growth

Chipoco, who immigrated to the United States from Peru at age 19, said he remains closely involved in training and mentorship at every location. “The only way to grow my business is not just selling food,” he told Business Debut. “It’s about culture and developing human beings.”…
