Columbus restaurant that’s always reinventing itself named one of best in US

Veritas is Columbus’ only Italian/Japanese/Mexican/British/Korean/Mediterranean restaurant. Actually, let’s go out on a limb here and say it’s the only place in the world in that category.

Now it’s in a slightly larger, but still exclusive group. According to USA TODAY’s 2026 Restaurants of the Year list, the Downtown restaurant that reinvents itself every few months with completely new cuisine and cocktails is one of the top 39 places to eat in the country.

“To be recognized is always great,” Veritas chef and owner Josh Dalton said of the honor. “This industry is hard. The last few years, especially hard.”

What makes Veritas stand out

Dalton doesn’t make it easier on himself, that’s for sure. He and his team are constantly kicking around ideas for Veritas’ regular reinventions and developing new dishes for the menus that will accompany them. The chef owns two other central Ohio restaurants (Speck, a few doors north on High Street, and Rosebud’s in Delaware) and plans to open two more (Rosalita and Amara, on opposite ends of Downtown) this year…
