Reinventing the potato, Spud Daddy restaurant to bring Idaho taters downtown

BOISE — One local entrepreneur is working to highlight what Idaho does best — potatoes.

Thomas Watson’s restaurant, Spud Daddy, is in the beginning stages of renovations at 404 S 8th St. The Kimberly native will be bringing giant baked potatoes and fresh Amsterdam fries to downtown Boise in a fast-casual format. The restaurant’s tentative opening is scheduled for April 25.
