West San Jose is about to get a serious new source of meat sweats. Wagyu Master Shabu, the Chubby Group’s new all-you-can-eat Japanese wagyu shabu concept, is set to debut tomorrow at the El Paseo de Saratoga shopping center. The spot is promising a buffet centered on premium Japanese wagyu, with tiered menus and a sprawling self-serve setup once the doors open.

According to KRON4, Wagyu Master will start service tomorrow and is launching a three-tier pricing model – Silver $58, Gold $78 and Diamond $98 – for its all-you-can-eat sets. The opening lineup is not exactly shy, with dishes like crispy squab, Beijing-style giant wing, charred tongue heart, and live crab and lobster specialties all in the mix. Chubby Group lists the San Jose location at 1410 El Paseo de Saratoga.

What’s On The Menu

Wagyu Master pitches itself as an A5 shabu experience that leans hard on Japanese-sourced wagyu, with three all-you-can-eat tiers that determine which cuts hit your table. As outlined by Wagyu Master, the Pasadena location’s menu notes that every set includes access to an 80-plus-item self-serve bar stocked with seafood, sushi, vegetables, hot pot add-ins, fried dishes and desserts. Higher tiers unlock rarer cuts and chef selections aimed at diners chasing that authentic Japanese A5 marbling.

Bay Area Appetite For AYCE Wagyu

Bay Area diners have already proven they will happily line up for the group’s wagyu concepts, where premium meat and high-value all-you-can-eat formats have become a reliable draw. As reported by SF Chronicle, nearby Chubby Cattle locations have seen long lines and heavy interest, which suggests Wagyu Master could be in for a similar first-week rush.

The San Jose Wagyu Master is moving into a storefront that has seen a couple of short-lived tenants come and go. Mall listings for El Paseo de Saratoga show The Melt and Tabu Shabu previously operating at the 1410 address before closing, per El Paseo de Saratoga. The unit sits near the mall’s movie theater and several food-court neighbors, which positions the shabu spot to catch both lunch and dinner traffic.
