Matt Lovely made his reputation as a soup guy. For four years in the early 2000s, he had two locations of Simply Soup Co. and was known for his repertoire of over 200 soups.
The restaurants were short-lived but some locals loved them. One Cap Times reporter wrote the soups were “like finely tuned Cadillacs … plenty of flavor and great texture.”
