Tacoma Cookie Craze Cove’s Pop Up Plots Leap From Market Tent to Bakery

Cove’s Cookies, the pop up cookie stall that has turned up at markets around Tacoma, Gig Harbor and Port Orchard, is inching toward a permanent storefront after building a loyal following. Known for oversized cookies and a rotating lineup of flavors, the small operation is aiming to open a brick and mortar bakery later this year.

If you want to get a taste before a storefront appears, Eventeny lists Coves Cookies at the Tacoma Sunday Market on March 1, where local bakers and makers gather on the first Sunday of the month. The market page includes event details along with a full vendor roster for the March date.

According to What Now Seattle, Cove’s Cookies is helmed by founder and baker Adriana Shaffer and business partner Jaxon Marquardt, who sell their treats at pop ups and farmers markets across Pierce County. The stall has become known for its larger than life cookies that rotate monthly, including a brown butter chocolate chip loaded with Ghirardelli chips and Maldon flaky salt, and an animal cookie stuffed with a Golden Oreo and topped with white chocolate and sprinkles. Shaffer wrote in an Instagram post last September that she usually shares the weekly schedule there and is “hoping to get a brick and mortar soon.”

Menu And A Possible Storefront

As reported by The News Tribune, the pair have hinted they have found a space and hope to open a bakery later this year. The plan is to expand beyond cookies to add items like banana breads and cinnamon rolls topped with fresh fruit. There is no official opening date yet, but local reporting points to a shift from market stall operation to a full bakery concept.
