Jack’s Deli new owner wants to win back customers one sandwich at a time

Don Apel, the new owner of Jack’s Deli and Restaurant, arrives at the deli every morning at 4 a.m., removing the corned beef from cold water after it soaked in it until 8 a.m., trimming and slicing it.

“People who order it lean and extra lean will notice the difference, and that’s a majority of what we sell,” Apel told Cleveland Jewish News.

He said he doesn’t want to “shock the system” with updates to the business at 14490 Cedar Road in University Heights, instead looking to improve the existing deli and make customers feel like they’re in Katz’s Delicatessen, a New York City institution since 1888…
