The hostess said we’d receive a text message when our table was ready after checking us in a few minutes before our 7:15 p.m. reservation at 1932 Cattleman’s Club, the new (and only) sit-down restaurant at the Houston Livestock Show and Rodeo from billionaire Tilman Fertitta.

No big deal. It was opening night for the Landry’s restaurant. For the first time, I wore a cowboy hat to fully embrace my fourth rodeo. I also spent the weekend judging the barbecue cookoff. This wasn’t a dinner to cosplay a Michelin inspector poring over every little detail…
