High Stakes by Bartolotta, a new European-inspired steakhouse from The Bartolotta Restaurants, is scheduled to open in Milwaukee in Summer 2026, expanding the group’s portfolio with a sophisticated dining concept designed to bring a fresh perspective to the city’s fine dining landscape. The restaurant will introduce a modern, cosmopolitan experience rooted in classic steakhouse traditions while reinforcing the company’s long-standing presence in the region.
High Stakes by Bartolotta will mark a new chapter for a prominent downtown location, with the concept centered on refined cuisine, elevated cocktails, and a vibrant social atmosphere. According to The Bartolotta Restaurants owner and co-founder, Chef Paul Bartolotta, the project reflects the company’s continued evolution and commitment to hospitality in Milwaukee. “High Stakes by Bartolotta represents an exciting evolution for our company,” he says, in a press release. “From the design and culinary approach to the overall energy of the space, every detail has been carefully curated to deliver an elevated steakhouse experience that feels both timeless and distinctly modern, further reinforcing our commitment to exceptional hospitality in the heart of Milwaukee.”
The restaurant is being developed in collaboration with designer Jay Franke of Jay Franke Design, continuing a creative partnership that has shaped several recent Bartolotta projects. The interiors of High Stakes by Bartolotta draw inspiration from London lounges and private social clubs, incorporating layered textures and architectural details influenced by 1930s Art Deco. The design aims to create a setting that balances glamour with comfort, contributing to the restaurant’s distinctive identity within the city’s dining scene.
Chef Bartolotta’s time in Las Vegas also plays a role in shaping the concept. During his tenure leading his restaurant at Wynn Las Vegas, he earned his second James Beard Award for Best Chef: Southwest in 2009. That experience informs the restaurant’s global sensibility, which blends European influences with a contemporary approach to fine dining.
A key component of the new concept will be the Peacock Lounge, a dedicated space designed for cocktails, light bites, and social gatherings throughout the evening. The lounge will offer a curated beverage program alongside music and a relaxed environment, allowing guests to gather before or after dinner or simply enjoy the space independently of the main dining room.
