National Crab Cake Day highlights Maryland tradition in the Carolinas

CHARLOTTE, N.C. — National Crab Cake Day is being celebrated Monday with a lesson in tradition from a Maryland native now calling North Carolina home.

Rebecca Tapper, owner of Poppy’s Taste of Maryland, said a true Maryland crab cake starts with restraint — and respect for the crab.

“A real Maryland crab cake is about the crab,” Tapper said. “You should see big pieces of jumbo lump, not filler holding everything together.”…
