Kitty’s in Hudson to reopen as French brasserie, grab-and-go market

HUDSON — Five and a half years ago, developer Ben Fain opened Kitty’s, a multi-concept dining space in a brick-red complex across from the Amtrak station in Hudson. Over time, it has expanded to include a market, a popular brunch cafe, and a farm-to-table restaurant.

Over that time, Fain has learned what works — and what doesn’t. “When people are getting on the train, they’re looking for speed and efficiency,” he said. “But when they get off, they’re looking for something special.”

This spring, Fain is putting those lessons to work. He is altering the layout and operations of Kitty’s Market so it can better serve as a grab-and-go cafe. And the restaurant will be transformed into Mr. Cat Brasserie, a French-inspired establishment…
