Ruby’s Announces Employee-Created Seafood Specials for Lent

Just in time for Lent, Ruby Sunshine in Charleston is offering limited-time Friday seafood specials created by Ruby team members, highlighting the creativity behind the kitchen.

Charleston locations feature their own menu of employee-developed dishes, including:

  • Alex’s Pimento Fried Catfish Sammie ($15) — Crispy USA-raised catfish topped with housemade pimento cheese, remoulade, lettuce and pickles on toasted brioche, served with fries.
  • Ruby’s Red Rice & Fried Shrimp ($14) — A classic Lowcountry staple with a Ruby twist, featuring whole-grain rice simmered in Creole tomato sauce with bell peppers and onions, topped with crispy Gulf shrimp and a sunny-side up egg.
