LOUISVILLE, Ky. — As tensions between the United States and Cuba build, a Kentucky-based Cuban is using his food to help offer glimpse into his country’s deep history and explain why he sought a new life in America.
Heilor Corrales, his mom Nani, and their family run a Cuban restaurant in Louisville called El Cimarron, serving everything from croquettes to empanadas.
