SCOTIA, N.Y. (NEWS10) — A new café is opening its doors in Scotia. Perk & Panini is set to open in the former Scotia Books & Vintage spot at 143 Mohawk Avenue.

Perk & Panini is owned by Colin Crandall, with Aline Doran as the operations manager. Both are Scotia residents and are raising their two children there.
Crandall and Doran have over 25 years of experience in restaurant management and customer service. Crandall most recently served as kitchen manager at Hometown Pub & Grub in Scotia. Before that, he was the kitchen manager at Powers Inn and Pub in Clifton Park.

“His experience and passion for food have been a big part of what inspired us to open a place of our own,” said Doran. “The village has been such a welcoming place for our family, and we felt this location was the perfect opportunity to create something special for the community.”
The Perk & Panini menu will feature specialty lattes, fresh drip coffee from Chris’ Coffee, specialty paninis and sandwiches with Boar’s Head meats and cheeses, pasta salads, pastries, specialty desserts, flavored lemonades, and other offerings. Doran said the eatery will focus on grab-and-go and takeout and will have limited seating available.

With the café going through some renovations now, Crandall and Doran are hoping to open in early April, pending final approvals and inspections. Perk & Panini will likely be open morning through mid-afternoon…
