Live-fire cooking is the star of the show at Rosy, a new restaurant from 2025 F&W Best New Chef Vinnie Cimino.
The first thing that diners may notice about one of Cleveland’s most anticipated restaurant openings of 2026 is the smoky-sweet campfire scent that wraps around the building.
Inside, 2025 F&W Best New Chef Vinnie Cimino works a delicate piece of pork neck. He dips it in a tare sauce with smoked butter and rubs it in hay, and then sears it over open flames.
In February, Cimino opened Rosy in Ohio City, just across the bridge from his nearly four-year-old downtown restaurant, Cordelia. The laid-back restaurant employs a retro color scheme of earthy rust tones and revolves around a live-fire grill that Cimino relies on for the majority of the menu.
Cimino first considered such a menu four years ago while at a July 4th backyard barbecue, just days before Cordelia opened. Cimino spent the holiday with friends over a fire pit as they charred veggies, cooked over hot stones, and riffed on the technique…
