When all-you-can-eat chain Chubby Cattle BBQ first announced it would open its first San Antonio restaurant, it kept quiet on the timeline. Now state regulatory filings reveal that the North Star Mall debut won’t happen until at least early 2027.
New project details filed with the Texas Department of Licensing and Regulation (TDLR) say that demolition on the 8,000-square-foot eatery at 7400 San Pedro Ave. won’t begin until May, with a projected wrap date in mid-February 2027. A “coming soon” landing page is now live on its website, but it gives scant details on what San Antonio can expect.
