Hills Cafe, a nostalgia-heavy neighborhood diner run by longtime Beverly Hills Café alum Hillary Fayth, quietly opened in Hialeah in November 2025. The compact 1,200-square-foot spot on W. 20th Avenue is already drawing regulars for the chain’s famous rolls, loaded salads and half-pound burgers. Open on weekdays for lunch and dinner, it bills itself as a neighborhood gathering place that Fayth describes as a personal tribute to the original Miami Lakes institution.
According to Miami New Times, Hills Cafe sits at 7380 W. 20th Ave., Ste. 101 and recreates a lineup of Beverly Hills Café staples. The menu leans on the classics, including the “Hills Cobb” salad, a half-pound “Hills Burger” with fries, a triple-decker Hills Club and a chicken parmigiana sandwich. The signature fluffy, fresh-baked dinner rolls are still a must-order side. Miami New Times also notes that the space comes in at about 1,200 square feet and is currently open on weekdays for lunch and dinner.
Fayth, who spent years at the former Beverly Hills Café, is leading the revival. She told What Now that she “started in 2001, and I was there for 23 years,” adding that she wants to keep the “base” of the old spot while still “putting my own swag on it.”
A menu built on nostalgia
Beyond the plates of comfort food, Fayth has shaped Hills Cafe to function as a community hub. The restaurant features a kids’ corner and a small bar area, with plans for events such as study groups and financial literacy classes, Miami New Times reports. The concept is intentionally smaller than the former multi-location Beverly Hills Café operation and leans into simple comfort classics paired with local programming. Fayth says those tweaks are shaped by longtime customers’ requests and memories.
Why locals care
Local10 reported that the original Beverly Hills Café closed its Miami Lakes location in July 2022 after 43 years, leaving regulars missing its rolls and loaded salads. News that a former employee planned to revive the familiar flavors sparked a strong online reaction. What Now noted that the cafe’s Instagram account had already gathered thousands of followers before the doors even opened, a sign that former customers were ready to come back…
