Lottie’s Café is expected to open soon in Glen Carbon, after a lengthy planning process.
Rick Frey, owner of Lottie’s, said he signed his first letter of intent in February 2022 to take over the space at 88 Magnolia Drive, Building A, Suite E, in Meridian Plaza. Frey said construction was going well as the restaurant moves toward opening.
“I’m anticipating a soft opening at the end of April, but I’d really love to be rolling full steam ahead May 1,” he said. “That may be a little aggressive, but we’re ready to get the space open and really start some foot traffic.”…
