It’s only springtime in Amarillo, but that doesn’t stop us from dreaming of fair foods. I mean, they consume our lives for two weeks in the fall, and then they are gone, and we have to wait again.

Occasionally, everything aligns just right, and we don’t have to wait for some of our favorites. We have a food truck that caters to some of our obsessions. The thing is that the one item I always had to have was the stuffed sopapillas.
