A New Restaurant Serving Up Florida’s Protected Species Is Coming to Manatee County

Today marks a new chapter for the Manatee County restaurant scene thanks to its latest opening. A new restaurant, called simply Extinctiōn, specializes in creative preparations of Florida’s most important protected species. Its signature dish, manatee steak, honors both the restaurant’s home county as well as its address on Manatee Avenue. Its ownership assures diners that the manatees are sustainably farmed with a special diet that maximizes marbling.
