LATHAM — Las Margaritas owner Roy Rojas pulled the lever of an ice cream machine and slowly rotated a margarita glass in a circular motion, filling it over the brim with a thick, golden-yellow beverage with a texture similar to a milkshake.
The machine, standing about as tall as Rojas behind the bar at his restaurant located at 710 Loudon Road in Latham, has been loaded with tequila, triple sec, lime juice and “a secret ingredient” that swirl together to make a soft serve margarita.
Since Rojas introduced the drink to his restaurant’s menu nearly two weeks ago, customers have lined up at the bar to try it, some traveling from hours away. Skylar Brown, the restaurant’s marketing manager, claims that Las Margaritas has sold a few hundred soft serve margaritas per day, especially on the weekends…
